Our Story

Hudson Hil’s Cafe and Market was formed in 2010 as the movement to source and utilize local food started to dominate conversations. After multiple discussions with community members, Bob and Hilary Hayes decided to utilize their culinary and financial experience to open Hudson Hil’s in Cold Spring, NY. Hudson Hil’s strives to create a comfortable and relaxed experience while providing guests with high quality, from scratch food, made with locally source and organic ingredients when available. Our eggs, meats, dairy, locally blended teas, locally roasted coffee, and produce come from suppliers and farms in the Hudson Valley. We are constantly working to deepen our relationships in the Hudson Valley and keep our menu selections fresh, fun, and unique.

From The Wall Street Journal, October 27, 2017:

Choose Your Own Hudson Valley Adventure - On weekends you’ll see troops of urban escapees marching from the Metro North train station, water bottles dangling from daypacks, to the Hudson Highlands State Park trailheads just outside this village. The easy-level Little Stony Point trail quickly ascends to a dramatic view of the Hudson and, down the road, the Cornish trail leads to the crumbling remains of a once-grand estate. One of the area’s most popular day hikes, Breakneck Ridge, is just north and as the name suggests, not for the novice—or for procrastinators; it’s closing for a year or so of maintenance on January 1. Fuel up with shirred eggs at Hudson Hil’s Cafe on Main Street Read more

From Hudson Valley Magazine "Best of Hudson Valley" (2013):

Editors' Pick: Best Motivation to Climb Breakneck Ridge - Hiker's Lunch Box at Hudson Hil's. Scaling the Valley’s version of Mount Everest takes all the willpower you can muster — but knowing you can nosh on Hudson Hil’s brown-bag lunch once you reach the top will get you there in record time. The $10.95 meal includes a sandwich from the eatery’s hiker’s lunch menu (turkey and vegetarian are popular choices), a piece of fresh fruit, a homemade cookie, and a bottle of water. “It’s an easy solution for hikers to just grab and go,” says co-owner Hilary Hayes. “Tons of hikers come in for it — and many come back down and eat here again afterwards, too.” Read more.
